So here’s the deal: my husband isn’t big on desserts (GASP!) but the one thing we can agree on is ice cream sandwiches, so I decided to make my own by using Graeter’s vanilla bean and salted caramel chocolate chip ice cream sandwiched between two homemade chocolate chip cookies.
Best part: I didn’t even have to leave my house to pick up any of these ingredients, including the ice cream! Now many of you may read that and think that I made the stuff from scratch. Whilst I would love to use one of the best ice cream maker models out there, it isn’t the case. I had it delivered! I’ve never received ice cream in the mail or even thought to order ice cream online. But you can! And with such ease! Think of how exciting it would be for your loved ones to receive a surprise package of frozen old fashioned Graeter’s ice cream delivered right to their doorstep for the holidays. I knew this package was coming and I still let out a squeal of joy when I saw it on my doorstep. Browsing the flavors online is so much fun, if you’re anything like me, you’re going to want them all.
The homemade ice cream sandwiches were a hit. They were simple to make and a fun cooking activity for kids, too. They are perfect for holiday entertaining too. You can make them as big or as small as you’d like and can add colorful sprinkles and nuts for a little festive flare.
We have enough prepped in the freezer to use for our DIY Graeter’s ice cream bar on Thanksgiving where guests can choose from a variety of Graeter’s mouthwatering flavors that were delivered frozen right to my doorstep, including mint chocolate chip, black raspberry chocolate chip, vanilla bean, salted caramel chocolate chip, and seasonal flavors like cinnamon and peppermint. I plan on putting out bowls of festive toppings to coincide with these flavors. I already know this will be a hit with both kids and adults!

Homemade Ice Cream Sandwiches with Graeter’s Ice Cream
Cookie recipe (borrowed from this website) or you can use store bought cookies but I highly recommend this recipe!
12 tablespoons ( 1 1/2 sticks) butter, melted and cooled
1 cup brown sugar
1/2 cup granulated sugar
1 large egg
1 egg yolk
1 teaspoon vanilla
2 cups + 2 tablespoons flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups miniature chocolate chips
Preheat oven to 325 degrees. Prepare a cookie sheet by lining with parchment paper, spraying with cooking spray, or use a silpat liner.
In a large mixing bowl or the bowl of a stand mixer, combine melted and cooled butter, brown sugar, and sugar. Blend until combined.
Add egg, egg yolk and vanilla. Blend until fluffy looking and light in color. About 2 minutes.
Add flour, baking soda, and salt. Blend just until combined.
Gently fold chocolate chips into the dough.
Use a 1/3 cup measuring cup and divide dough into 10 large balls.
Bake 12-15 minutes, or until browned around the edges while the middle still looks slightly undercooked.
Let cool on baking sheet for 15 minutes and then remove to cooling rack.
