Homemade Graeter’s Ice Cream Sandwiches

So here’s the deal: my husband isn’t big on desserts (GASP!) but the one thing we can agree on is ice cream sandwiches, so I decided to make my own by using Graeter’s vanilla bean and salted caramel chocolate chip ice cream sandwiched between two homemade chocolate chip cookies.

Best part: I didn’t even have to leave my house to pick up any of these ingredients, including the ice cream! Now many of you may read that and think that I made the stuff from scratch. Whilst I would love to use one of the best ice cream maker models out there, it isn’t the case. I had it delivered! I’ve never received ice cream in the mail or even thought to order ice cream online. But you can! And with such ease! Homemade Ice Cream Sandwiches with Graeter’s Ice Cream

12 tablespoons ( 1 1/2 sticks) butter, melted and cooled
1 cup brown sugar
1/2 cup granulated sugar
1 large egg
1 egg yolk
1 teaspoon vanilla
2 cups + 2 tablespoons flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups miniature chocolate chips

Baking Instructions

Preheat oven to 325 degrees. Prepare a cookie sheet by lining with parchment paper, spraying with cooking spray, or use a silpat liner.
In a large mixing bowl or the bowl of a stand mixer, combine melted and cooled butter, brown sugar, and sugar. Blend until combined.
Add egg, egg yolk and vanilla. Blend until fluffy looking and light in color. About 2 minutes.
Add flour, baking soda, and salt. Blend just until combined.
Gently fold chocolate chips into the dough.
Use a 1/3 cup measuring cup and divide dough into 10 large balls.
Bake 12-15 minutes, or until browned around the edges while the middle still looks slightly undercooked.
Let cool on baking sheet for 15 minutes and then remove to cooling rack.

Ice Cream Sandwich Instructions

Once the cookies have cooled completely, add a scoop of your favorite Graeter’s ice cream flavor using an ice cream scooper
Layer with another cookie
Roll the outer edges in sprinkles (optional)
Wrap in plastic wrap or wax paper, careful not to smudge the ice cream edges
Freeze for 8 hours or overnight
Allow time to soften a bit after you remove them from the freezer
