French Onion Soup

I had a severe craving for French onion soup a few weeks ago and browsing the recipes on Pinterest sealed the deal for me. I know I say this about most if not all of the recipes I share on here, but seriously, this was so easy to make. The entire process took about 20 minutes and I devoured this flavorful goodness in about 2. I borrowed the Weight Watchers recipe and toasted a piece of low fat 35 calorie Italian bread with 1/2 a teaspoon of parmesan cheese for a low fat version.  I was really expecting a ton of herbs and spices to go into this recipe, but you get so much flavor from the beef broth and onions. You can add a bay leaf, thyme, or garlic as well.

What you need:

4 cups fat free beef broth
2 medium onions
4 tablespoons red cooking wine
2 tsp thyme
Salt and Pepper to taste
1 tsp Worcestershire sauce
4 pieces of white bread or French bread
4 tsp parmesan cheese
 
 

What you need to do: 

Slice onions
Heat saucepan
Saute onions with cooking wine until tender
Add beef broth
Add Worcestershire sauce
Add thyme, salt, and pepper
Bring to a boil
Simmer for 10 minutes
 
For the low fat version: spray toast or French bread with Pam spray, add parmesan cheese, toast in the oven until golden brown. Serve with soup.
