Chicken Tortilla Soup

I took a couple of recipes and modified them to make my own chicken tortilla soup. I’m trying to perfect a creamier version but this one is just as delicious. A blend of delicious ingredients with just a slight kick to it, I’ve had this soup both as a main course for lunch and side for dinner.

What you need (makes 4 cups)

1 onion, chopped
4 cups water
1 packet low sodium taco seasoning
1 jalapeno pepper
1 (15 ounce) can corn
1 can (15 ounce) diced tomato OR you can chop 2-3 fresh tomatoes (that’s what I prefer!)
1 can (8 ounce) tomato sauce
2 rotisserie chicken breasts, shredded and pulled from bone and skin
1/4 cup shredded Mexican blend cheese
Tortilla strips
sour cream (optional)
 
What you need to do:
Heat saucepan and add onion stirring until tender
Add water and taco seasoning
Add jalapeno, corn, diced tomatoes, tomato sauce
Bring to a boil and then simmer for 20 minutes
Add chicken and cheese
Top with tortilla strips and sour cream (optional) when serving
