Festive Salad with Homemade Balsamic Dressing

I think I took more pictures of my salad on Christmas than I did of humans. It was fresh, colorful, festive, and best of all simple.

 

What you need for the salad:

Blend of greens. I like the power blend.
Grape or cherry tomatoes
Red pepper
Cucumbers
Dried cranberries
Light feta cheese
Red or yellow onion
Green pepper
Green olives

What you need for the dressing:

1/2 cup balsamic
1/2  cup olive oil
1 tablespoon dijon mustard
1 tablespoon honey
1/4 cup Half & Half or heavy cream
Salt to taste
Pepper to taste
Oregano to taste
Mix all of the ingredients together and taste test it. We sort of eyeballed the amounts of each until we achieved the desired taste.
