Egg Sandwich

If you’ve ever watched Parks & Recreation you will know how much Ron Swanson loves breakfast food. When it comes to the first meal of the day, I’m right there with Ron. I am a huge fan of dining out for breakfast, but it’s often greasy and unhealthy. Plus, unless it’s something really over the top, I’m always pretty cheap about it – I can make eggs at home.

Enter the homemade egg sandwich on ciabatta bread. It’s delicious, inexpensive, and easy to make. Not to mention, it’s totally Weight Watchers friendly. Here’s what I do on Sundays:

What you need: 11 points per serving (sandwich + hashed browns)

Ciabatta bread. I buy the Orlando brand (4 points per serving)
Egg
Fresh deli cheese of your choice; I like Great Lakes American cheese (optional, but highly recommended!)
2 slices of turkey bacon
Alexia hashed browns (2 oz)

 

What you need to do:

Start making your hash browns on a skillet first; they take the longest to cook.
Fry your egg as you normally would. I like mine over easy.
Cook bacon
Add cheese over the egg (optional)
Toast ciabatta in oven
Gently place egg and turkey bacon on bread

Enjoy guilt-free with a steaming cup of coffee!
